- 6 large eggs
- 1 white onion
- 4 smoked bacon rashers
- 85 grams grated cheese
- 1 red pepper
- ¼ teaspoon salt & pepper
- Chop up the onion, pepper and bacon rashers.
- Fry until brown and add to a muffin tin.
- Whisk the eggs, add salt & pepper and add to the muffin tin.
- Sprinkle grated cheese over the top and place in the oven for 15-20 mins..
