Meatloaf with avocado and sour cream

Classic meatloaf with little gems inside

  • Meatloaf

    • 3 Large eggs
    • 500g pork mince
    • 300g Pork Rinds
    • 500g beef mince
  • Sauce

    • 1 tablespoons paprika
    • 2 tablespoons english mustard
    • 3 tablespoons olive oil
    • ¼ teaspoon salt & pepper


  • In a food processor, blend the pork rinds. Mix together the meat, add in the pork rinds. Split the meat in half, add the first half to a bread tin and put the other half to one side.
  • Hard boil 3 eggs, gently place them on top of the meat. Add the other half of the meat over the top.
  • In a bowl, mix paprika, mustard and olive oil together. Pour on top of the meatloaf and cook in the oven for 50 minutes.
